These are suggested steeping times. We recommend experimenting with different times to find the one that best suits your taste. Always remember that over-steeping can make your tea taste bitter and pure water at the correct temperature can make a significant difference.

No thermometer handy? Here are some rules of thumb for establishing the proper temperature for steeping, depending upon your container;
205°-210° F – boiling water
180°-200° F – boiling water, rested for 3 minutes
160°-180° F – boiling water, rested for 5 minutes
